Ajwain Aloo (Potatoes Cooked With Carom Seeds)

Give your boring Aloo recipe a tangy and zingy twist with Ajwain/Carom Seeds!

Ingredients

    Boiled potatoes – 6
  • Image
    Onions – 2
  • Image
    Curry leaves – 6-8
  • Image
    Carom seeds – 1 tsp
  • Image
    Chili flakes – 1/2 tsp
  • Image
    Turmeric powder- 1/2 tsp
  • Image
    Chili powder – 1 tsp
  • Image
    Cumin powder – 1 tsp
  • Image
    Mustard oil – 2 tbsp
  • Image
    Dry Mango powder – 1/2 tsp
  • Image
    Salt – to taste
  • Image
    Coriander leaves chopped – 4 tsp

Method

  • Image
    Wash the potatoes and boil them in a pressure cooker with 2 cups of water and wait for one whistle.
  • Image
    Peel the potatoes and cube them once the pressure settles and potatoes cool down.
  • Image
    Heat oil in a pan and add the carom seeds. Wait a minute, and then add the curry leaves and onions.

    Add turmeric, cumin, chili powder, crushed chili flakes and salt, sauté for a minute before adding the boiled potatoes.
  • Image
    Stir the potatoes and coat them with the spices.

    Add dry mango powder and cook the potatoes for 3-5 minutes. Stir occasionally.

    Add the chopped coriander leaves and take the potatoes off the flame.

    Add a pinch of Jiva Organic Garam Masala for a different flavor.

    If you are using kachi gani (non-refined oil) or mustard oil, heat the oil till it smokes and then only start cooking.
