Cashew Butter Caramel Cups

This tasty, low sugar, healthy, super YUMMY treat only has 6 ingredients and doesn't require any baking. I dare you not to eat them all at once!

Ingredients

    3/4 cup vegan chocolate chips
  • Image
    1 Tablespoon refined coconut oil
  • Image
    1 cup pitted dates (you can soak your dates in hot water if they are a little hard)
  • Image
    2-4 Tablespoons hot water
  • Image
    3/4 cup cashew butter, room temperature
  • Image
    Additional 3/4 cup vegan chocolate chips
  • Image
    Additional 1 Tablespoon refined coconut oil
  • Image
    Optional: Sea salt for topping

Method

  • Image
    Line a muffin tin with your preferred muffin liners.
  • Image
    In a small pot, melt 3/4 cup chocolate chips with 1 Tablespoon coconut oil over medium heat.
  • Image
    Evenly spread the chocolate among the muffin liners so that each have a chocolate layer.
  • Image
    Put in fridge until chocolate hardens.
  • Image
    In a blender/Vitamix/food processor, puree dates until smooth.
  • Image
    Add water 1 Tablespoon at a time if blender is struggling.
  • Image
    Layer cashew butter on top of hardened chocolate layer.
  • Image
    Put in fridge until cashew butter hardens.
  • Image
    Layer caramel date puree on top of hardened cashew butter layer.
  • Image
    Melt remaining 3/4 cup chocolate chips and 1 Tablespoon coconut oil over medium heat.
  • Image
    Cover date layer with remaining chocolate and top with sea salt.
  • Image
    Put back into fridge to harden. Keep in the fridge or freezer.
