    50 gr. ground almonds (almond flour)

    35 to 45 gr. erythritol or a tiny pinch of stevia

    vanilla bean powder or a few drops of organic vanilla aroma

Method

    Crack open 1 full egg into a bowl
  • Image
    Beat the egg with a fork or a whisk
  • Image
    Add 2 gr. of baking powder
  • Image
    Add 35 to 45 gr. of erythritol or a tiny pinch of stevia
  • Image
    Add a few drops of organic vanilla aroma (alternative: 2 gr. of bourbon vanilla)

    Add 70 gr. of buckwheat flour
  • Image
    Add 50gr. of ground almonds
  • Image
    Mix the dough with a tablespoon
  • Image
    Add 100 gr. butter
  • Image
    Knead the dough with your hands
  • Image
    Form 12 – 15 cookies with two spoons

    Bake at 175ºC / 375°F for 15 to 20 minutes
