Buttery mash with mustard seeds

Give a flavor boost to your regular Creamy mashed potatoes with the twist of spicy mustard seeds!

Ingredients

    1.5 kg Golden Delight or brushed potatoes, peeled, cut into 5 cm pieces

    2 tablespoons light olive oil
  • Image
    1 tablespoon mustard seeds
  • Image
    125 g butter
  • Image
    250 ml (1 cup) milk
  • Image
    1 bunch continental parsley, chopped

Method

    Bring the potato to the boil in a large saucepan of cold water over high heat. Reduce heat to medium-low. Cook for 25 minutes or until tender. Drain. Transfer to a large bowl. Set aside for 3 minutes or until the potatoes are dry.

    Place the saucepan over medium heat. Add the oil and mustard seeds and cook, shaking the pan, for 1 minute or until the seeds start to pop. Add the butter and milk and cook, stirring, until the butter melts.

    Add the potato to the pan and mash until smooth. Use an electric beater to beat the potato mixture for 2 minutes or until light and fluffy. Stir in the parsley and season with salt and pepper.
