Capsicum Potato with Methi Seeds

Aloo Capsicum is a dry Indian curry made with fried Potatoes & Capsicum. It is easy to cook, flavorful as well as healthy with minimal spices!

Ingredients

    1/2 kg – Capsicum
  • Image
    6 – Medium sized Potatoes
  • Image
    1 tsp – Fenugreek seeds
  • Image
    3-4 – Green chillies
  • Image
    1/4 tsp – Turmeric
  • Image
    1 pinch – Asafoetida
  • Image
    2 tbsp – oil
  • Image
    Salt
  • Image
    Coriander leaves – 1/2 bunch
  • Image
    1 tsp – Lemon juice

Method

  • Image
    In a dry pan, roast fenugreek seeds lightly. Keep the roasted seeds aside.

    On the other side, peel and cut potatoes into medium sized cubes.
  • Image
    Wash the capsicums and cut them into medium sized pieces after deseeding.
  • Image
    Heat oil in a pan, add the powdered fenugreek seeds and fry for 1 minute.

    Add slit green chilies, asafoetida and turmeric.
  • Image
    Put in potato cubes. Sauté on high flame for 2 minutes
  • Image
    Put in cut capsicums and sauté.
  • Image
    After 2 minutes reduce heat to medium, add salt to taste and cook till done.

    Garnish with coriander leaves and lemon juice just before serving. Serve hot with rotis.
