Creamy mushroom pasta vegan ( Coconut Milk Pasta Sauce)

Creamy Mushroom and Spinach Pasta is an easy, but Tasty vegetarian pasta dish. It is dairy free mushroom sauce for pasta lovers.

Ingredients

    Pasta ( Spaghetti): 300g

    Olive oil: 3Tbs
  • Image
    Mushrooms : 2 Cups Sliced
  • Image
    Baby Spinach : 2 Cups
  • Image
    Coconut Milk : 1 Cup
  • Image
    All purpose flour : 1 Tbs
  • Image
    Salt: To Taste
  • Image
    Pepper : 1Tsp
  • Image
    Oregano : 1/4 Tsp

Method

  • Image
    Boil pasta according to package instructions. Don’t drain all of the pasta water.It is a great addition to the sauce.

    Heat the (2Tbs) olive oil in a large non stick pan over medium-high heat.

    Add in mushrooms and stir, until mushroom softened and turn brown. Add in the spinach and sauté for about a minute.

    Add salt and Black pepper and Mix.Remove from heat and set aside.

    In same pan add remaining oil and sprinkle all purpose flour.
  • Image
    Stir continuously while adding some pasta water .
  • Image
    Now add coconut milk and ring it to boil. Stir continuously until sauce get thickened.

    Now add cooked pasta and cooked vegetables.

    Mix thoroughly.
  • Image
    Garnish with parsley and chili flakes.
