Easy Vegan Protein Bars With Puffed Amaranth

Once you try these homemade, easy vegan, gluten free protein bars with puffed amaranth, you'll never go back to any store bought snacks!

Ingredients

    1 cup almond butter (or peanut butter)

    2 tbs ground chia seeds
  • Image
    2 tbs hemp hearts
  • Image
    2 tbs shredded coconut
  • Image
    1/2 cup puffed amaranth
  • Image
    1 and 1/2 scoops of vegan chocolate protein powder (or any flavour you like)
  • Image
    2/3 cup almond meal or coconut flour
  • Chocolate Frosting

    1/4 cup cold pressed coconut oil
  • Image
    1/4 raw cacao powder
  • Image
    1 tsp maple syrup
  • Instead of the homemade chocolate frosting you can also melt some good quality & sugar free vegan chocolate on top.

Method

    First you need to puff the amaranth. Take a small or medium sized pan (or pot) and pre-heat it to medium/hot. Now here is when this gets a little bit tricky:
    The temperature has to be PERFECT in order to immediately puff all the amaranth seeds without burning any. You might have to toss the first couple of batches away until you find the perfect temperature with your stove top. Too hot will pop the seeds well, but will burn some too. Not hot enough and half of them pop and the rest just burn.On our gas stove we needed to preheat the pan for about 5 minutes then the amaranth popped perfectly. It’s a trial and error guys.

    Place all ingredients minus the almond meal into a bowl and mix well.

    Little by little add some almond meal until it forms into a nice and thick dough-like consistency. You can use either your hands of a ladle/spoon to mix, which ever feels easier.

    Place the dough on a plate with parchment paper, press firmly into a square shape.

    Place in the freezer.
  • Chocolate Frosting

  • Image
    Place the ingredients in a bowl and mix together. You can adjust the amounts of the raw cacao and maple syrup to your own taste preferences.

    Take the bar dough out of the freezer and cut into 8 bas sized pieces. Decorate and drizzle the chocolate frosting on the bars how ever you like it.

    Place the bars back in the freezer.
