Variyali Sharbat

Variyali sharbat or saunf sharbat is a healthy fennel seed drink to beat the summer heat.

Ingredients

  • Image
    1 cup Fennel Seeds, soaked in 1½ cup Water
  • Image
    1½ cup Rock Sugar
  • Image
    1 pinch Citric Acid
  • Image
    Green Food Colouring (optional)
  • Image
    Ice Cubes
  • Image
    Chilled Water

Method

  • Image
    Grind the soaked seeds with water coarsely and then soak it again in the same water.
  • Image
    After 30 minutes, sieve the soaked pulp and add rock sugar to it.
  • Image
    Boil this water stirring continuously until the sugar is completely dissolved.
  • Image
    Boil for another 3 minutes and add citric acid to it.
  • Image
    Turn the flame off and sieve properly.
  • Image
    Add green food colouring if desired.
  • Image
    In a glass add 3-4 tsp. fennel seed concentrate, ice cubes and chilled water and serve.
